Trying New Things

Mango&&Strawberry Oatbran

In the depths of my freezer, I found some mango chucks that I obviously forgot about. I've only had mango a few times in my life (usually fresh) so I figured, why not? I could use a little tropical inspiration in the frigid Michigan weather. Let me just say, waking up to snow a darkness is not always a welcoming sight. Don't get me wrong, I love snow, but sometimes I dream of something a bit brighter.

Today I found out I have two large papers and a giant test on Monday. And guess how I reacted? Calmly. Thank you yoga, thank you. Still, I know how my weekend is going to be spent now...

Luckily, my trip to the store and dreams of dinner cheered me up. At the store, I grabbed a new Larabar flavor. Pecan cookie. It was delish, as I know am convinced all of their flavors are. I've yet to try Jocolats but you can bet that's on my list.

For dinner, I tried a new recipe from Veganomicon tonight. Somehow everything I try from that book turns out amazingly (even with all the substitutions I make. It must be magic.)

Skillet Cornbread and Blackened Tofu

After yoga tonight, I decided to try a little treat I picked up on my last whole foods run (best. store. ever.) It was my first ever soygurt! And probiotic at that. It was a blueberry soygurt made by wildwood organics. I actually loved it! It didn't taste like dairy (duh) so that was a first yay. And it wasn't even sickening sweet like most flavored yogurt. The texture was great and it paired perfectly with blackberries dipped in.

But the true selling point? My tummy is happy. Nope, no unhappy stomach due to dairy anymore for me. Wahoo! Maybe I'll try some more soygurt soon. Any recommendations? I just noticed that the health store by my house just expanded their vegan section so I'll have to check it out.

I'm not exactly sure what sparked my curiosity to try new things, but I have definately been more adventurous lately. Even if it's just the little things. Anywho, food wise, I think my decision to transition into veganism brought this out. By the way, Katie decided to start Vegan Thursdays. I'm in (naturally)! Who's with me?

Well I'm off to write a history paper on the Mongolian Dynasty in contrast with the Spanish colonial system. Wish me luck!
