Banana Split Brownies

It's a miracle these brownies even made it to their final stage! In my house, we say that "a little mouse must have had a snack," but I think you know what happened ;). Luckily, I caught the "mice" in the act and quickly finished. Not only are these yummy to eat, but there's also quite fun to look at! Not to mention it's the perfect way to use up black bananas (my bananas were mashed without me even trying... yeah, that black). No wasting here! 




Banana Split Brownies 
Makes 16 Small Brownies 


Brownies

4 ounces semisweet chocolate 
1 1/4 cup mashed banana (about 2 very large bananas) 
1/4 cup canola oil 
1 tbs unsweetened applesauce 
3/4 cup sugar 
1 tsp vanilla extract 
3/4 cup all-purpose flour
1/4 cup cocoa powder 
1/4 tsp baking soda 
1/8 tsp salt 
1/2 cup chocolate chips


Preheat the oven to 350*F. Line an 8x8 brownie pan with wax paper or spray it with cooking spray.

Chop the semisweet chocolate and melt in the microwave on half power (or on the stove-top, if you like). Time will vary. 


In a large bowl, use a handheld mixer to mix the mashed banana, oil, applesauce, and sugar for a minute. Once it is combined, mix in the melted chocolate and vanilla.  

Sift the flour, cocoa powder, baking soda, and salt in a medium bowl. Add it to the other mixture in stages, utilizing the hand mixer. Mix for another minute, making sure to stop if it seems to get too thick. 

Equally spread the batter in the pan. Sprinkle chocolate chips on top and place in the oven. 


Bake for 30-35 minutes, using a tooth pick to test for doneness. Once done, take it out of the oven and place on a cookie rack to cool (simply placing it on the grates of an oven works, too). 




Banana Split Topping

3/4 banana, mashed 
1 tbs sugar 
2 tbs almond milk 
1/2 tsp vanilla extract 
1.5 tsp arrowroot 
1/2 tsp lemon juice 

Once the brownies are cooled, Combine all ingredients in a bowl. Microwave until slightly thickened, about 15-30 seconds (you could also heat it on the stove but you might need to add more almond milk). Use immediately. 



Assembly

melted chocolate (add a little oil to make it easier to drizzle)
sprinkles
shredded coconut 
banana slices 

Cut the cooled brownies into squares. Add a spoonful of banana split topping. Drizzle melted chocolate, add sprinkles and coconut, and garnish with banana slices... or whatever your heart desires. Go crazy and enjoy your banana split creation!

  3. Bananas? Chocolate? My two favorite foods... together?! Swoon. These are almost too good to look at for very long, so I can't imagine what they must taste like. Thanks for the recipe, girl! If I can break away from my current cookie obsession, I just might have to make some brownies...
