Vegan Mofo Take Two

Hey Y'all!

I am back already thanks to the celebration of Vegan Mofo. (You will be hearing from me a lot this month :D.) If you are not familiar with Vegan Mofo, it is basically a month dedicated to awesome vegan food (mofo=month of food). Basically, any vegan food-lover, be it omnivore to raw vegan, can participate simply by being extra enthusiastic about vegan food this month. But really, did we need an excuse to be pumped about yummy food? I did not think so.

To celebrate today, I made myself one fiesta of a dinner.

  • 1/4 cup sweet onion 
  • lotsa garlic
  • 1/4 cup diced red bell pepper 
  • 1/2 cup cubed zucchini
  • 3/4 cup cooked black beans 
  • 1/2 tsp chili powder 
  • 1/2 tsp cumin 
  • salt + pepper


I suppose this was like a healthy vegan take on nachos. Kale chips & homemade baked brown rice chips over lard-fried ones? Salsa and nooch instead of greasy cheese? I will take it!


Oh, and a shout out to my favorite salsa makers, Garden Fresh. They are a local company that uses all fresh ingredients with a whole lot of taste. I am a big fan of their sweet onion salsa, but I have heard many people swear by their others as well. And never fear onion-haters, this salsa taste like anything but. Its sweet flavor and cooling nature is the perfect compliment to any spicy dish or just plain ol' chips.

  5. omg so thats what MOFO stands for!!!! haha wow, took me so long. i thought it was "mother F***er" excuse my language..geez was i off! haha.

    i love mexican food! i think the spice level for me has to balance with the sweet level. too much of both or one too much more than the other isnt good. but the right balance is AMAZING! <3

  6. Your fiesta dinner looks delish! I love making my own mexican food.
    And to answer your question aboutn Lucy's, I love the oatmeal ones with a glass of milk! They are very crunchy so I dunk them in the milk and they taste sooo good :)
